The field they make cause molecular disruption, like a less powerful Necron gauss weapon. When they hit, the field causes the atoms of the target to more or less break apart and disintegrate. Durability isn't much of a factor, as it'll wreck armor as much as anything, but I think that shields can protect against a Matter Disruptor. Maybe adapted Tyranid shells too.
Basically, I'm pretty confident a power weapon will be lethal, assuming a proper hit.

The field that surrounds power weapons is some exotic form of energy that disrupts matter, it's not plasma though. It's more akin to light sabers. Also, even if he can counter plasma weapons he won't be able to pull that trick off with melta guns since those just heat their targets like a laser. They also have Lascannons at their disposal.

It depends. Void Shields need a lot of power, so you usually only see them on Battle Titans and larger. You don't get much melee in those cases, but Voids appear to mainly activate when hit with something with high enough speed or energy, though it seems that settings can be changed for different scenarios. Mainly however, a Titan melee attack doesn't seem to activate the shields, as in Titanicus there is such a fight wherein a Warhound was able to wear down a larger Warlord with a Titan close quarters weapon.
As for bullets and lasers, it seems to just send those into the warp.
